Ok, so thank you all who have replied so far. The consensus seems to be:
1. unknown - no suggestions
2. dill, fennel fronds, or coriander [if it tastes like anise, it is fennel, but my palate is horrible, lol]
3. chives
4. Swiss chard
5. kale (tastes cabbagy!) [but could have been arugula if it had tasted more spicy]
6. mustard greens (it takes like mustard!) [could have been collards if it didn't have the mustard taste]
