1 container of cream cheese (8 ounces)
1/4 cup of softened butter
2 tbs of lemon juice
2 tsps of finely grated lemon zest
1 tsp of vanilla extract (or seeds from 1 vanilla pod)
5 cups of icing sugar (confectioners sugar)
Beat all the ingredients apart from icing sugar together till light and fluffy. Slowly beat in the icing sugar.
Add more lemon juice or icing sugar if needed.
Variation - Sub orange juice and zest for lemon for a lovely orange frosting.
