Well, I've decided that I like ya'll so much, I'm going to share a recipe for my most favorite cake, one that noone else has gotten it out of me . My momma baked this for me every birthday up until the year she died, my 23rd birthday.
Now, I have to make it for my boys on theirs and my husband.
Ya'll might know it by another name, but, I haven't seen anything like it on here.
Mississippi Mud Cake
Preheat to 350
Cake Ingredients:
1 cup butter/margarine
1/2 cup hersheys cocoa
2 cups sugar
1 1/2 cup flour
4 eggs
1 cup coconut flakes
1 cup chopped pecans
7oz. jar marshmellow creme
Melt 1/2 cup cocoa and 1 cup butter. Do not boil, just melt.
In large bowl, cream flour, sugar and eggs together. Add cocoa mixture. Blend in nuts and coconut. Pour into greased 9x13 cake pan. Bake for 30 minutes or until toothpick or cake tester, inserted into center comes out clean. Spread marshmellow creme on top while still hot.
Icing
1 cup chopped pecans
1 stick butter ( 1/2 cup margarine)
1/2 cup cocoa
1/2 cup evaporated milk (don't use any other)
1 teaspoon vanilla extract
1 box powdered sugar ( I think that it is 1 lb.)
Melt cocoa and butter, remove from heat. Mix powdered sugar, vanilla and milk. Add to cocoa mixture. Add nuts.
Spread over marshmellow creme.
Let cake set in a cool area for about 2 hours. Let cool completely.
