I have made my first ribs today and it was quite the experience because it was my first time to smoke on my Weber kettle. Overall the cook went well, I attempted to do the 3-2-1 method and probably should of done more like a 4-1-1. The ribs were done after the 3-2; so I sauced them, caramelized, and the pulled them off. The grill stayed around 250 for the entire cook, it may have been around 200-225 for the first couple of hours though. I haven't quite got the temperature control down. They are really tender with a great smoke ring, only thing is they were falling off the bone so much it was realy tough to cook. Not to mention they were done about an hour early. I placed them in the oven to stay warm with the oven at 170, we'll see how that works.
