I'm going to smoke 11 racks of St Louis style spare ribs on Saturday. Hope they all fit ofn my Char-broil Silver. My son and I bought some Charcoal Companion brand roast / ribs racks to smoke them in. Got them for $9 each at Kohls today. They are heavy duty and have a non-stick finish. Each rack will hold 6 slabs. I might use the 3-2-1 method. I'm not sure yet. I'll see how it goes and play it by ear. I have read a lot about cooking ribs but have never smoked them yet. I bought full spare ribs and the butcher is cutting the tips to make them into STL style ribs. I will smoke the tips some other day. They were $2 a pound. I bought 14 racks. They are huge. I will share a few pics later. Also making some Pit Boys BBQ Baked Beans. "Um, smell that?" My brother-in-law gave me his moms #9 cast iron dutch oven with lid and handle. It's over 50 years old. Not sure what the #9 means. Maybe 9 quarts? In memory of her I'm calling it "Betty's BBQ Baked Beans". Cooking for 13 family menbers coming over for my daughters brithday party BBQ. Going to be a good weekend for smokin at my house.
