Open face sandwiches made with the sous vided roast beef from earlier in the week, caramelized onions, sauteed mushrooms, and swiss cheese. Smashed small yukon golds that had been steamed then fried.
We had breakfast for supper... and not the usual omelet/sausage/potatoes! Instead, we had bacon, and eggs to order (soft scrambled with American cheese for Himself, over not-so-easy for me), and really fluffy apple pancakes. Yum!
I dug out the last of the sausage and bean soup. We topped it with a lovely Portuguese EVOO and Parmigiano Regiano. Whole wheat baguette to go with it. Very satisfying and filling.
