I sometimes double this recipe to make a 2 layer cake.
1C all purpose flour
1C sugar
1/2C unsweetened cocoa powder
1/2tsp baking soda
1/4tsp baking powder
1/2tsp salt
3/4C milk
1/3C vegetable oil
1tsp vanilla
1 egg
Grease & flour (use cocoa pwder to avoid leaving white marks on your cake) a 9x1 1/2 inch round or 8x8x2 inch square cake pan & set aside.
Combine flour, sugar, cocoa powder, baking soda, baking powder, & salt in a large bowl. Add milk, oil, & vanilla. Combine just until moistened with a mixer set on low. Beat on medium speed for 2 minutes. Add egg & beat for 2 minutes more.
Bake for 30-35 minutes in preheated 350F oven. Cool on a wire rack for 10 minutes before removing cake from pan. Cool completely before icing with your favorite frosting.
