In a saucepan, empty 1 can of undrained crushed pineapple, 1/3 cup snipped dried apricots, heat to boiling, cook rapidly for 10 min, stirring occasionaly.
Add 1/2 cup sugar and 1/4 teaspoon grated lemon peel, reduce heat to simmer , for 5 min, until the mixture thickens, stirring often.
put in a stainless steel bowl or let it cool in the pan, then put in a jar or container, store in refrigerator.
It tastes so good on Artisan bread or English muffins or whatever you like.
