In a deep pot, melt 3 tab. butter then saute 1 med onion,sliced and 1 clove crushed garlic. Add 1 can 28 oz. of Italian tomatos, the nice ripe tomatos from our yards are long gone so I use the canned ones fro Italy.Add 1 Tab/ of dry mustard or you can use some Dejon,salt and pepper. Simmer uncovered for10-15 min.Stir in 1/4 cup tube tomato paste You might want to add more here.Add 1/4 cup of flour and2 cups chix broth.bring to a boil stirring all the while.Puree in a blender and then strain for seeds and skins. Add 1-2 cups light cream. Reheat to serve DO NOT BOIL Add4-5 Tab. sherry
