My wife has a 1943 Wartime Edition Cookbook with a Coffee Cake recipe she wants to try.
2 Tb. Shortening
1/2 cup sugar
1 egg
3/4 cup flour
2 tsp. baking powder
1/4 cup milk
1/2 tsp. vanilla
+ topping ingredients.
Bake in a deep greased piepan.
My wife doubled the recipe hoping to fit a 9 X 13 pan. Ha! It fit a 7 X 11 pan. Now she wants to try doubling it again to fit the 9 X 13 pan. So thats 4 times the original recipe. 8 tsp. of baking powder doesn't sound right.
Should she try it (4X) or adjust something?
