Pasta Night !
Little Necks on the Half-Shell, Steamed Mussels & Spaghetti in a Garlic-Butter sauce with Minced Clams........

Slow roasted Chuck Roll, served with mashed potatoes and the drippings sauce :)

Took about 3 hours on low heat (150C-175C) but well worth it. I broiled it for a few minutes at the end, to give the meat some crust.

Golden beets with their greens, onions, garlic, prosciutto mixed with pasta, pasta water and Parm, garnished with toasted pine nuts and more Parm. I think I will leave prosciutto out if I make again. Made this once before a lllooonnnggg time ago, but used red beets. It looked like we were eating a plate of pepto-bismol since you cook the pasta in the water used to cook the beets.

We just "scrounged" for supper. DH had the last of the tourtière with beans and pork out of a can. I had leftover breaded haddock as a sandwich.

I made pan fried burgers. Himself's had caramelized onions and American cheese, mine had sauteed mushrooms and provolone cheese. Aldi potato puffs and little pickles and tomatoes were the sides. Aldi cream puffs are defrosting as I type...

We had a leftovers night, or Mixed Plate - a little of this and a little of that :LOL:

DH's plate consisted of (starting from the top of the plate and working clock-wise) leftover Cucumber Kim Chee (or Kimchi-whatever), leftover Fried Noodles, leftover Chicken Katsu, Kamaboko or Japanese Steamed Fish Cake
oh and there's a little dish in the middle of Shoyu mixed with Wasabi-very American I know

And for Moi, (again starting at the top) leftover North Shore-Style Garlic Shrimp, leftover Fried Noodles, leftover Cucumber Kim Chee, leftover Grilled Teriyaki Chicken.

Dessert later will be Cake Balls :yum:
 
Keeping with my new vegetarian lifestyle, I had refried bean tacos with all the fixings. TB had the fixings on his tacos with meat. We were both happy!
 
I have questions. ;)

  1. Did you like the crust?
  2. Why did you use cauliflower instead of a regular wheat flour crust?
  3. If you liked it, what was your method / recipe?

It was ok for cauliflower ..I wouldn't eat it often..a bit involved, but I love a challenge..I have seen recipes for cauliflower crust pizza for a few years and always wanted to try it..I did...
There are many recipes on line for it. Basically, you process the cauliflower in a processor until it is very fluffy, add egg, cheese, and form it into a disc on parchment paper..bake it until brown for about 15-20 minutes..then, dress it and put it back in the oven to bake like a regular pizza..we enjoyed it and were surprised how it turned out..
 
We didn't really have dinner last night. My friend and neighbor turns 40 today and is a little sensitive about it, so I organized a small get-together with a few other neighbors and we had an outdoor party with snacks and one friend making margaritas. I made individual Greek salads in plastic cups and focaccia with tomatoes, yellow bell pepper and fresh rosemary from the garden. The rain held off just long enough for us to have a great time for a couple of hours.

That was sweet of you to do that for your friend! Lucky for her, though, that my dear friend back home isn't her friend. Or that Himself isn't her hubby. When I turned 40, she snuck over to our home while the kids and I were out at Denny's for my free dinner (organized between her and Loverly!) so she could decorate the yard with styrofoam headstones and black balloons. Meanwhile, Himself was out of town on business but sent me a lovely floral arrangement... which I discovered was a funeral basket when my friend stopped by the next day to collect her decorations. Good times, good times! [emoji23]
