We've been busy watching the theatre of the absurd today. Didn't realize how late it was until we started getting really hungry. Himself did a Chinese take out run. My hero!
 
I had a burst of energy today and cooked a big pot of sauce for pizza topping and pasta sauce.

Also, I cut up a giant chicken breast for cutlets and made chicken parm.

So dinner was chicken parm and spaghetti with tomato sauce.

I had a leftover chicken breast from the other day, so I made gravy and warmed the sliced chicken in it. I also sautéed a medley of vegetables - onion, yellow bell pepper and zucchini. We still have Christmas cookies for dessert. 20210106_200015.jpg
 
I lost track of time, so had to make something quick. I did cube steak in the pressure cooker with onion gravy, mashed russets and steamed broccoli (was going to be roasted, but again time!). It's such satisfying comfort food. I rediscovered cube steak a few years ago. My mom always just fried it, so it was dry and tough. Slow cooking or pressure cooking really makes it wonderful.
