We had just about all the leftovers for supper. I'm glad to have them out of my fridge. They were still tasty.

Chicken Encinitas Casserole and 7-Layer salad. We will be having leftovers tomorrow....

We ate out of the freezer tonight. SO had some crab cakes and I had hearty soup flavored with mint and yogurt.

I made a chicken and veggies stir fry with a light Bourbon sauce. Topped the servings with toasted white and black sesame seeds.

It has shredded chicken breasts, green chilis, salsa, and uses slightly milk-thinned Cream of Chicken and Mushroom soups layered with corn tortillas and topped with cheese. I should have planned for another layer of tortillas, but have not made it in a while. It reheats well and holds heat well. Momma use to call it "Church Chicken" because it is nice for pot lucks. People seem to like it. I like it.
