we've been going through the "boxes of family index card recipes."
here's a interesting looking one - but it has no "name" or what it's supposed to be!
timing would be from the early 1900's - DW's grandmother - area would have been the central part of South Carolina

anyone familiar with anything like this?

5 cups grated potatoes
1 cup brown sugar
1 cup white sugar
1 cup flour
2 sticks butter
5 eggs
2 tsp baking powder

lemon peel, cinnamon, nutmeg, mace, allspice
2 cups milk

bake at 350'F
 
There are recipes from the Carolinas very similar using sweet potatoes to make potato pudding.
 
the kugel is a good stab - but indeed 2 cups of sugar is way sweet for what is typically a savory dish.



if it said sweet potatoes, I'd hazard a sweet potato souffle kind of idea, especially those seasoning . . . the eggs & baking powder should make it puffy.
but the usual with that is to boil&mash the sweet potatoes - not heard of grating them raw into such a dish.
 
No, there are quite a few recipes that used grated raw sweet potatoes.

It could be she just used regular potatoes because somebody didn't like sweet potatoes or it could be that she just knew to use sweet potatoes. Regardless, th recipes are nearly identical, other than variations in the flavorings, types and amounts.
 
the spices just don't seem to go with regular potatoes.
I suspect it's a sweet potato pudding, sure fits a lot better - were it titled that, the omission of what kind of potato would not be a major thing.
the recipe card is in her handwriting - so it's not a transcription error.
perhaps I'll just make it and see what comes out of the oven . . .

I have a cookbook from my grandparents, great grandparents, and great great grandparents Friends Church dated 1913 in Oskaloosa Iowa. There is a recipe for potato cake that calls for:

1 cup butter
2 cups sugar
4 egg yolks
1/2 cup milk
2 cups flour
2 t. baking powder
1 cup mashed potatoes
T. each cloves, cinnamon and 1/2 nutmeg
4 egg whites

Bake in layers and ice with caramel icing
Filing

2 cups light brown sugar
1 cup sweet cream
 
this recipe is on the sked for Tuesday. I'm going to use sweet potatoes - I just can't see that spice combo used for regular potatoes.


no qty's on the spices given . . . will be winging it.
 
so it's been made. with a caveat or two, declared delicious.

since "grated" is not a well defined size, here's the grated sweet potato,
the dry mix, the finished dish:

notes from first go:
(1) it is very sweet. works okay as a holiday 'candied' dish - but for everyday I'll reduce the sugar to 75%
(2) same with the butter. it's swimming in butter - use 60 vs 90 grams.

bake 45 minutes at 350'F
 
similar recipes are "sweet potato pudding"
DW mentioned it would be a good filling for sweet potato pie....
