I love fried yellow squash. Slice them about 1/4 inch slices and I just coat them with lil flour that has been seasoned with onion powder, garlic powder, s & P.
I usually fried them in frying pan with mixutre olive oil and butter.
One day I was in a time crunch and floured them and then decided to take a sheet pan (cookie Pan) spray it with oil and put the slices on them. I put a lil melted butter over each slice and baked about 5- 8 min and then flipped them and cooked till done.
They came out great. That is the only way I will do it now.
Especially in the summer, yes heating the kitchen up but I am not stand over the frying pan doing them in 2 batches.
Plus they all get done the same time.
