Jambalaya question

A friend brought me a bag of Jambalaya mix, { rice, spices).


There is about 1 cp rice, and the directions on bag say, Add 2lb. cooked meat and veggies, to your liking. and 2.5 cp water or broth.



I always thought of Jambalaya as a mainly Rice dish.


That sounds like a lot of meat to me.


What do Y'all think?

Most of the jambalaya recipes that we make call for 1-1/2 cups converted rice. Think of the rice as a vehicle for the other goodies. 2 pounds of cooked meat isn't really a lot.
 
Yeah... that comes to about 5.33 ounces of protein and veggies per serving of rice, which seems pretty spot on to me.
 
The recipe I've been making for years has 1 c converted rice to 1 lb shrimp, 1/2 lb diced ham or andouille, a diced bell pepper, and a diced onion, (plus all the spices) so that's probably about 2 lbs of all the proteins and vegetables to the cup of rice. And it looks like mostly rice, when finished!
 
If you look how you split up the meats - some ham, some shrimp (a lot!:rolleyes:) some chicken, andoulli - as said, it really isn't much.
