I have recently started learning to cook real food, because I don't want my son to have to grow up on TV dinners  The only thing I seem to be having a problem is with my cakes. The different icings I have made all have turned out great tasting, but I have tried 3 different recipes and followed them to the letter, all 3 have had different portions of ingredients, and different ways to mix them. For some reason though, all of them have turned out with more of a biscuit texture than a fluffy cake texture. I don't understand, maybe it is the recipes, they are off different websites, or is it me? What is the secret to a good fluffy cake?

Hi sethsmommy and welcome to Discuss Cooking!

Well, I am not a "baker" but my first thought is are you over mixing once you incorporate your dry ingredients with the wet?

I'm sure someone who is proficient at baking will help MUCH more. Sorry, but this is why I don't bake  LOL
