I thought I had submitted this earlier but I cant find it. I have read that adding some coffee to a chocolate cake made with cocoa powder will richen the flavor. I am looking for a ballpark to use to start adding freeze dried coffee. One teaspoon? 2? The cake has 2 cups of sugar, 1.75 cups of flour, 1 cup of milk, 1 cup of hot water and .75 cups of oil just to give you an idea of the bulk.

Here they put 1 small dose of espresso coffee, freshly made - that's one small Italian cup of very very strong coffee. I find it lifts the chocolate flavour very well indeed. Hope this helps. Lavazza is a well-known brand, widely here in Italy and also used in bakery.
