Question Bright green pickles?

I've seen bright green pickles at luncheons and covered dish dinners. Are they "regular" pickles with green food coloring? Can I add the green food color to any kind of pickles? I can never seem to track down the person who brought those pickles to ask for their "secret".

I am planning to make lime watermelon rind pickles this weekend and am wondering if I can make them bright green?

Any ideas/suggestions would be appreciated. Thanks.

I know some of the jarred pickles add tumeric, but that gives it a more yellow color than green. My pickles start off bright green, but tone down as the pickling process proceeds

They are fermented pickles which often retain a bright color. Refrigerator pickles will do the same, but not as much.
Support bacteria. It's the only culture some people have.
