Oh that I could still eat all the superbowl snacks. i'd be making Samosas. Pigs in the blanket, a cheese and salami tray, Olives, filled with can cheese, and baked chicken thighs, with bbq sauce, or my smouldering chicken.
Another great coating, and this would be good for wings, 1/2 cup Stove top Stuffing, sage flavor, 1/2 cup panko bread crumbs, Plae in food processor, and pulse to crumble the Stove Top and mix all together. Add 1 tsp. ground pepper. dry chicken and dredge in flour, egg wash, then bread crumb/stuffing mix. Place on parchment paper lined cookie sheet, and bake at 375' for 30 minutes. Serve with hot sauce.
For a change of pace, add chili powder to 3 tbs. ghee (clarified buttrer), and heat in a large pan. I use my Atlas flat-bottomed wok. Add 1 tsp. popcorn salt. Heat until kernels are all popped.
For an alternative to popcorn, or potato chis, cut uncooked rice spring roll papers into bite-sized pieces with kitchen shears. Place these, a few at a time, into hot cooking oil. They Will instantly puff up into a crunch/soft chip that can be seasoned as you like. Delicious.
