ORANGE PIE
1 cup sugar
1/3 cup flour
1/4 teaspoon salt
1 1/2 cups orange juice
2 tablespoons lemon juice
3 egg yolks, beaten
2 tablespoons butter
G rated rind 1 orange
1 Vanilla Wafer Pie Shell
1 recipe Marshmallow Meringue
Sift dry ingredients together, add fruit juices and cook slowly until thickened, stirring constantly.
Add slowly to egg yolks, return to heat and cook 2 minutes longer.
Add butter and orange rind. Cool. Pour into pie shell, cover with meringue and proceed as directed. Makes 1 (9- inch) pie.
FRENCH
Omitmeringue.
Whip 3/4 cup heavy cream, sweeten and fold 1/2 into cooled filling.
Pour ½ into pie shell, sprinkle with chopped pecan meats, add remaining filling and spread with remaining whipped cream.
