It's quite simple....
Bellinis:
2 cups sliced peaches, fresh or thawed frozen
2/3 cup apricot or peach nectar
2 1/2 cups champagne
Blend peaches and nectar in blender; process until smooth. Spoon 2/3 cup peach mixture into each of 4 stemmed glasses; add 2/3 cup champagne to each glass.
