First cook on the Drum Smoker.
I overestimated the capacity of the surface area. I really didn't want to use a rack but three slabs of spares just don't fit. I will have to do a little twisting and turning as the cook goes on.
I am trying to maintain temps in the 230 range because from what I read the drum smokers kinda have a turbo effect going on inside.
I am measuring temps from two sides of the grate and the lid. The temps seem stable and have been easy to maintain. So far the smoker has respond well to adjustments made to the air intakes.
