Citrus Jalapeño Chicken
Ingredients:
4 (4-oz.) boneless, skinless chicken breast halves
1/4 cup CROSSE & BLACKWELL® Orange Marmalade
1 tbsp Dijon mustard
1 tbsp olive oil
1 tbsp ORTEGA® Diced Jalapeños
2 tsp lime juice
1/2 tsp grated lime peel
1/8 tsp ground cumin
Procedures:
1 PREHEAT oven to 400° F. Line baking sheet with heavy-duty foil; place chicken on prepared baking sheet.
2 COMBINE marmalade, mustard, oil, jalapeños, lime juice, lime peel and cumin in small bowl. Brush chicken generously with half of marmalade mixture.
3 BAKE for 15 minutes. Remove from oven; brush chicken generously with remaining marmalade mixture. Bake for an additional 15 to 20 minutes or until chicken is no longer pink in center. Season with salt and ground black pepper.
