WOW thats why I love this group you ask for help and you get it , thanks yall very much for the info I learn alot here with my BBQ family!!!

Go to any grocery store and buy a roll of breakfast sausage, Jimmy Dean, Bob Evans, Ol' Folks...whatever. Cut the package so as to keep the sausage in shape.
Apply your favorite dry rub to it, if you like. Place it on the smoker with your choice of wood, and smoke til you reach an internal of 160 degrees, slice it and eat it.....easy as that.
If you want to stuff it...roll the sausage out put your stuffings in it, roll it back up and follow same directions.
