I made the beet cake!

It turned out reasonably well, well the three quarters that made it out of the pan, don't you hate it when that happens??? The mixture was huge though, next time I will halve the recipe. It has a lovely flavour and tastes really rich, and is a very pretty colour. It doesn't need any frosting in my opinion.

I wish I'd had that when my kids were little.
I could have gotten veggies in them.
as it was I'd grate up carrots and squash into chili, sloppy joes etc.
Now they are both vegetarians... :roll:
