Hi Debbie ~ Here is my recipe for Big Soft Ginger Cookies. A friend gave it to me several years ago. I love to make these cookies for the holidays They are great with hot chocolate, cider, eggnog, coffee, or tea. You may adjust the ginger to your taste. Hope you give them a try!
BIG SOFT GINGER COOKIES
2 1/4 cup flour
1 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons ground ginger
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 cup butter, softened
1 cup sugar
1 egg
1 tablespoon water
1/4 cup dark molasses
2 tablespoons sugar
Preheat oven to 350ºF.
Mix together the flour, soda, salt, ginger, cinnamon, cloves. Set aside.
In a large bowl, cream together the butter and 1 cup of sugar until light and fluffy. Beat in the egg and then stir in the water and molasses.
Gradually stir the flour mixture into the molasses mixture. Shape the dough into walnut sized balls and roll them in the remaining 2 tablespoons of sugar. Place the cookies 2 inches apart onto a parchment lined or ungreased cookie sheet and flatten slightly.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an airtight container.
