I want to make lentil soup tomorrow and just discovered that the "ham hock" i bought is a fresh, not smoked one. Can I use that, or should I get a smoked ham hock. How would you use a fresh one?

I'd use it too. If you want a smokier taste, a drop or 2 of liquid smoke or some bacon would add that.
I always forget about that liquid smoke.
Just don't overdo it, a drop at a time! Too much can make it taste nasty, IMHO.
