Mediterranean Roasted Garlic Salad

I don't know why more people don't post on this thread - I love salads of all kinds. My life would be incomplete without fresh vegetables and fruits! So this is a really simple but tasty salad - a favorite.

Mediterranean Roasted Garlic Salad
1 Red bell pepper, roasted, peeled and cut into thin strips
3/4 lb Green beans, blanched to al dente
2 Heads of garlic, roasted, peeled, and mashed
3 tb Sun-dried tomatoes, in oil, drained and chopped
1 tb Fresh basil, chopped
2 tb Pine nuts or walnuts, chopped
1 tb EVOO
2 tb Balsamic vinegar
3 c Chopped salad greens (use a mesclun mix if possible)
Salt and pepper to taste
1/2 c Romano, parmesan or feta, grated or crumbled

1.In large mixing bowl, toss all ingredients. Serve at room temp.
I don't know how I missed this before; it sure looks good. The only thing I would probably do differently, is toast the pine nuts. I am keeping this one. :)
