I think crushing the nuts was part of the problem. Nuts that get crushed release more oil than ones that get chopped or shredded. I have an old, hand cranked, nut mill. It shreds very finely. I use it mostly for nutmeg. It attaches to a table the way an old fashioned meat grinder attaches to a table. It's old fashioned, but works well.
This thread reminded me of Almond Crescent Cookies.


A different take using ground/chopped almonds and a good splash of almond extract instead of vanilla.
