Ms. Mofet's Waffles/Corncakes (W/ Corn and Bacon)

Servings/Waffles depend on size/shape of Waffle Iron


Single Recipe:

1 egg
1 1/4 cups Whey, Buttermilk or Milk*
1/2 tsp. baking soda
1 tsp. baking powder
3/4 cup cornmeal
1 1/4 cups flour - less 1 TBSP.
1 TBSP. Wheat germ***
1 tsp. sugar
2 TBSP. melted butter or bacon fat
1/2 tsp. salt
1/2 tsp. Vanilla extract or maple extract - or to taste

*Can use milk & Add 2 TBSP. Saco Buttermilk Powder
***May omit wheat germ, replace with flour

Double Recipe:

2 eggs
2 1/2 cups whey, buttermilk or milk**
1 1/2 tsp. baking soda
1 1/2 tsp. baking powder
1 1/2 cup cornmeal
2 1/2 cups flour - less 2 TBSP.
2 TBSP. Wheat germ**
2 tsp. sugar
4 TBSP. melted butter or bacon fat
1 tsp. salt
1 tsp. Vanilla extract or maple extract - or to taste

**Can use milk & Add 4 TBSP. Saco Buttermilk Powder
***May omit wheat germ, replace with flour

Optional Add-ins:

1 (8.50 oz.) can corn kernels, drained
Bacon - fried, drained and chopped (as much as you like)

Mix dry ingredients together in small bowl.
Mix wet ingredients in large bowl.
Add dry to wet and stir just to combine.
Add corn and bacon to batter DO NOT OVER MIX (it will be lumpy).
Add extra flour if needed to make a thick batter.
If batter is to thick thin with milk.

Cook according to waffle iron directions.

I use this batter for pancakes and waffles.

Top with one or more: butter, syrup, sour cream, Greek yogurt, fresh fruit (strawberries, blueberries, banana, etc.), strawberry preserves/compote, lemon or lime curd. Possibilities are endless! YUM

Freeze leftovers and warm in toaster. Make great PB&J sandwiches.
(Or ice cream sandwiches SHHHHHH) :angel:

Note: Acids in the Fresh buttermilk or whey will react with the baking soda and produces a fluffier end product.
