Church needs a lot of cookies for a function next week so I am making up different batches all week.
Working on making 12-14 dozen of these right now
1 cup salted butter
1 cup light brown sugar
1/2 cup granulated sugar
Whip together until very fluffy
add two eggs, 1 tsp very good quality vanilla and mix together very well.
In another bowl mix together:
1tsp baking powder
1tsp baking soda
2 cups cake/pastry flour
Add the dry to the wet in batches until completely mixed together well.
Then add:
2 cups good quality choco chips
and also you can add 1 cup of finely chopped walnuts or pecans.
drop by teaspoon onto ungreased baking sheets.
bake at 350 8-10 minutes cool on racks. Serve with a tall glass of frosty cold milk. Store leftovers away from children and husbands they freeze well.
Makes approx 3 doz.
