I’m water bath canning salsa tonight- followed the recipe exactly, all the steps for sanitizing the jars etc. Recipe calls to process for 15minutes, and about 5minutes into the processing my neighbors stopped by and I stepped outside. I processed for 15mins & turned the timer off, took the lid off to rest the jars but totally forgot to tune the burner off before going back out to visit with my neighbors. The jars probably processed for 40minutes in boiling water. Are these still safe to eat? All the lids have popped already, so as far as I know the seal is good. I wasn’t sure if it’s possible to over process?
