Recipe - (TNT)Sage Chicken & Rice

Sage Chicken & Rice:


1 large onion, chopped

1 garlic glove, crushed

1 stalk celery, sliced

2 carrots, diced

1 tsp dried sage

1 1/4 low sodium chicken broth

12 oz chicken breasts, diced into 1" cubes

1 1/3 mixed brown and wild rice

14 oz can chopped tomatoes

dash tabasco sauce (optional)

2 medium zucchini, sliced thin on a bias

3 1/2 oz lean ham

salt and pepper to taste. (Mrs. Dash is great if you don't want extra sodium..many different varieties)

1. Place the onion, garlic, celery, carrots, and sage in large saucepan, and pour in chicken stock. Brong to a boil, cover pan and simmer for 5 minutes.

2. Cut the chicken into 1 inch cubes, and stir into pan with vegetables. Cover pan and continue to cook for 5 more minutes.

3. Stir in rice and tomatoes. Add tabasco, and seasonings to taste. Bring to a boil, cover, and simmer for 25 minutes.

4. Stir in zucchini, and ham, and continue to cook, uncovered for another 10 minutes, stirring occasionally, until rice is tender.

Enjoy, with a nice salad and some crusty fresh bread!!!!!!
