Spatchcocking a chicken is to cut it down the back and flatten it. I do it when I made chicken under a brick, as well as for other recipes. Good to do when grilling chicken, too.

I know this is a dumb question. Do you think it's possible to make panko at home? Or do you have to get it in the asian section of the supermarket? Isn't it just really really dry large white bread crumbs?Panko?
