Hi all! Just want to put out there that i'm interested in making some turkey jerky. What part of the turkey would make this a success. Thanks in advance.

I've never cooked turkey jerky, bbut the way I cook jerky is at normal bbq temp, (250) and it only takes an hour or so, and definitely passes 165 degrees. So at least that takes care of the pathogenic bacteria problem.
