We had some of that white bean and Italian sausage stew that I made Tuesday. We still have enough for a meal if we have grilled cheese sandwiches with it. I served it with whole grain miche. That was so much better than that bland gluten free bread that we tried out. I love this soup.
Tonight's dinner marks the practical end of turkey leftovers. I made a delicious stock with the parts of the turkey we didn't eat and made turkey rice soup. That and dinner rolls were dinner.

I'd be lying if I said they were very good, but they are edible, provide a protein and have a decent texture ( when cooked)
I often use them on the grill ( shish kabob like recipes), but was kinda cold and didnt feel like standing over the grill so I took the easy way out.
A sort of chicken cacciatore with boneless, skinless chicken thighs, bell peppers, onions, garlic and tomato sauce. There's a few marinated fresh mozzarella balls on top.
