SO had her contract terminated as of the end of the month. She has been looking for another client and just landed a new job so we are celebrating.

A bottle of Prosecco and appetizers to start then filet mignon, garlic mashed potatoes, sliced tomato and shallot salad, apple squares with vanilla ice cream.

Oooh my mouth is watering reading about all of this delicious food! And Andy M, congrats to your SO!

Not sure about dinner yet, but right now I'm making brunch for the two of us: roasted banana pancakes with blackberry sauce, and oven-fried bacon.

Did a little baking this afternoon for the first time in ages and it was pretty nerve wrecking Turned out very nice though so now I have a little more confidence when it comes to baking :)

Self-frosting nutella cupcakes

For tonights meal I wanted to do some roasted vegetables with roasted chicken but when I took the chicken out the fridge they were off Can't believe I only bought them yesterday! Had to improvise a little so went for roasted vegetable with bacon

This is before and later will be after.

I just put a huge pot of salsa on. And I'll be pickling cucumbers as soon as I finish prepping all the jars etc. The longest part of this process is just sterilizing the jars and rings. Sheesh.

I've been feeling kinda yucky since 6:00 this morning, so I really don't have much of an appetite. I did make some plain rice for lunch though.

After the 4 hour drive I was lazy and hit the salad bar at a market close to the hotel. Now I am eying the bottle of Merlot....

I was on my own last night and made a steak salad. Just a simple iceberg lettuce salad topped with vegies, mozzarella cheese, a few french fries, sirloin tips and sauteed peppers and mushrooms. The dressing was ranch.

Went to a matinee community theatre performance of "Dearly Departed" and made Swiss steak with mashed potatoes and iced tea for a beverage. The steak "gravy" had lots of chopped celery, green pepper and onions, so no extra veggies. Made tapioca pudding for dessert.
