Just a light refreshing and low cal, healthy salad for a quick laboral lunch ...
1 large fennel bulb
2/3 cup Evoo
1 ripe however lightly firm avocado
2 triple skin oranges ( with fragrance or do not buy
1 small red onion
1 spring onion
a handful of fresh basil leaves
a drizzle of lemon or lime
A Lettuce of choice
Wash and slice all of the veggies
I plate as follows: the arugula and radicchio
Then the fennel, then the onion sliced finely and the oranges, a drizzle of lemon or lime, sliced avocado and a drizzle of Evoo and toss and now, a drizzle of Modena Balsamic and toss again
One can add other ingredients to their liking.
