In the summer we seem to get caught up making all types of salads, pasta, potato,seafood, that we overlook just an easy simple salad of tomatoes,eggs,salt,pepper, evoo and vinegar with just a hint of fresh sliced basil and it's tasty, and refreshing with a slice of french bread for lunch or goes nicely with anything grilled..So, I've decided to make a tomato, egg salad for our dinner tonight. hard boiling 4 eggs then will cut them in quarters
I'm using 3 large ripe tomatoes and I'm cutting them in wedges
using green onions about 6 and slicing them both the green and white
some fresh basil that i plan to cut in ribbons
evoo and your favortie vinegar
salt and freshly ground balck pepper, put everything in a bowl and toss gently then serve right away.
