I don't know ZoVe, but would probably take the sausage, put a couple of small pricks in it, toss it into a frying pan with enough water to come up to about a third to one half of the sausages and let it simmer. Would turn the sausages every so often.
When they firm up a bit, would increase the temp and let the water evaporate and the sausages brown.
Then remove sausages when done.
Would toss into the pan relatively thinly sliced onions and peppers (prefer a mixture of red and green peppers). You may need a little bit of oil to start you off.
The mixture will get a bit watery.
Would let the water get a bit reduced and then add spaghetti sauce, tomato paste, or pizza sauce (I love pizza sauce) and whatever herbs you want.
Would scrape the bottom of the pan to get all of the brown bits in the sauce.
Would let the mixture reduce until you are happy with the consistency.
Put the sausage in a roll (Italian loaf or something of that sort, the sausage can be put in as a chunk or cut into biased slices if you wish) and top with the onion-pepper mix.
A sprinkle of hot pepper flakes on top would work well.
You can put some cheese on the mixture and nuke it if you want.
