Searching for pickle variations

In 3-4 days, they will be half sour, in two weeks completely sour.

My biggest problem with pickling is letting them go full term. I like pickles from the new cucumber type to the totally sour, and everything in between. Rarely my pickles make it to the sour stages cause I'm constantly sampling. Luckily I have several gallons at all stages now, so I can leave yours alone and let them do their thing .

I don’t have that problem. As I do not like half sour pickles.
