I fried an entrecote steak. I don't know if it was just a really tough steak or if I just did a terrible job of cooking it. It was medium rare; the crust was hard and it was extremely chewy, even cut across the grain. I have not been at my usual competence levels since my shocking news. I had a couple of pieces knækbrød (crisp rye bread) with mayo with that. It was all I could muster.

I had to look up entrecote steak. Basically a ribeye steak. I'm thinking you just got a bad steak from the store. Ribeye is normally easy to cook, tender and juicy. I have had some bad ones over the years, but not often.
