I don't grow these nor do I think I've ever even eaten them. Knowing that several of our members do, when I came across this from The Woks of Life, thought someone might be interested in it.

Stuffed Bitter Lemon
 
That looks really good, but I haven't tried making any of those "stuffed" bitter melon dishes - seems like something I have serve for several people, and not for having leftovers. I've seen a number of similar Indian recipes, and that method of making the "rings" out of the melon seem sort of a pita - I thought of maybe using a cookie cutter, but haven't done it yet!

I like the sound of that recipe, though, and I could make a variation on it, making some patties, using some chopped up, salted bitter melon, with the other ingredients - might be able to freeze the leftover, uncooked mix.
