Butterflied Chicken & Acorn Squash

I'm cooking in a backyard comp on Saturday so tonight was supposed to be a prep night for that, wasn't planing on cooking. The stars aligned and I got the day off tomorrow so, why not get out in front of my grills, right?

Some simple chicken and Winter squash.


Chicken seasoned with poultry seasoning and S&P. Acorn squash filled with butter, brown sugar, walnuts and nutmeg.

Chicken on for an hour, all vents wide open.

Half hour to go, added the squash.

Off. One of the many things I hate about the colder weather, it gets dark early and messes up my pics!

Plated with a spinach salad.

Haven't cooked much lately and really miss it and posting. Thanks for looking. Have a great weekend, all!
