Our plans keep fluctuating, but it appears we will have somewhere between 12 and 16 of my siblings, some of their kids, and mom (besides us 3) for Christmas dinner, with 6 or more guests staying overnight.
Our plan so far is to have my siblings bring appys and desserts. I think we have shrimp cocktail coming, and my son wants to make devilled eggs and his special cheese fricos. Also, I bought 2 large smoked whole mackerel to carve up and make a platter. And there's always a tray of olives (Castlevetranos, Kalamatas, and Cerignolas) and pickles and breadsticks/crostini.
For the entree, DW and I will make a ham, 3 grilled london broils, possibly a roast turkey, and sides. My niece also says she'll make a lasagna.
The sides will be herb roasted spuds, DW's crusty cauliflower, steamed stringbeans or asparagus, coleslaw, potato salad, Italian bread and Polish Rye.
The day after, I will be making omelettes, home fries, and sandwiches of Taylor ham, egg and cheese for breakfast.
I'm not sure what else will change over the next week, but some may stay a second night. If so, dinner will be Korean BBQ and banchan for a late lunch/ early dinner.
What are your plans, or what's on your menu for this Christmas?
I just hope I get to sit at the big table again.
