I did this chuck on the smoker yesterday. I pulled it off at 140* and grinded for enchilada meat. My wife made them as well as Apple spice and banana chocolate empanadas. Enchiladas just didnt taste right?
We also made some home made enchilada sauce out of the chilis in the picture below? The sauce was great!
If anyone knows what kind of chilis they are let me know, they burn - thanks. db
