I had my first cook on my new UDS and I am very pleased with how it all came out. I had a little trouble with temperature and cooking hot at around 275, but I believe that came from leaving the lid open for to long. I cooked a whole chicken and a small 3-4 pound brisket, which will be going into some burnt end beans for my wife's food day at work. The chicken was marinated with a herb and garlic store bought marinade and rubbed down with Three Little Pig's KC Sweet. On the brisket I slathered with mustard and rubbed down with John's BBQ Rub, something I found at one of the local supermarkets, I've never heard of it.
I cooked the brisket to 160 and then took and set into a foil pan with about a 1/8 inch of water in the bottom, covered it with foil and cooked it to 190. I did that because there just wasn't a lot of fat on it, so I was hoping to put some moisture back into it by doing so, and it seemed to work. I did make some burnt ends, but what didn't get set aside from beans were eaten before I could take a picture.
The chicken was good, tender, and a hit with the family.
