Fried Turtle

If you have answers, please help by responding to the unanswered posts.
I have never tried Fried Turtle and I really don't think that I want to. Nothing about your suggestion but it isn't for me.

More than willing to try it... if I could find it. Even the "rare" meat store doesn't carry turtle.
 
I had some nice Turtle sausages at The Gumbo Shop in N.O. back in the 90's.

I thought those big snappers (we call them Alligator Snappers back home in OK) were endangered as well?

As far as Armadillos go, clean out the shell, somehow fasten the end of the tail to where the head would be, and let the shell dry out, all curled up. You now have a handy basket.
 
SugarNSpice and Lucky Trim, if you have any idea on how to cook a good Roo, or a good Croc Tail, I would really apprieate it, I have just left a post for just these things, I have them here at home and need some good and diferent ideas on how to cook them.

Back in the old days, when turtle meat was easily available, my mum used to cook it with chopped celery, chilli slices, garlic and ginger in light soya sauce. Really yummy!
