My husband is diabetic, so I adapt as many recipes as I can so he can enjoy treats too. But I myself can hardly stand the sweet fatty bakery muffins. These are so easy and sooo good. I always 3 or 4 frozen bananas to use too.
In a blender put:
4-5 overripe banana
1 cup prune puree or applesauce
2 eggs
blend until smooth
In a bowl mix:
1 1/2 cups whole wheat pastry flour
1/2 c. oat bran
1 t. baking powder
1/2 t. soda
1/4 t. salt
1 t. cinnamon
1 cup coarsely chopped walnuts
Fold the puree from the blender into the dry ingredients and mix until just mixed. Don't overmix.
Put into greased muffin tins and bake at 350 for about 20 min or until done.
